Ito is a small room — a hinoki counter of eight seats and a few tables beyond. The counter is omakase only, by reservation. Arrive on time; the meal begins together.

Around a dozen courses, served the moment each is ready. Chef Ito forms every piece by hand, a few feet away, and sets it down in front of you to eat at once — the rice still warm, the fish just cut.
There is nothing to order and little to decide. Tell us about allergies when you book, and let the evening move at its own pace.

The case is stocked from the morning's delivery, and the counter follows it. A recent evening moved something like the progression below — yours will differ.

We cook to the calendar, not the clock. In autumn the fish turns rich and cold-water; by spring it runs lean and bright. The counter changes with it.
Because of that, no two visits are quite the same — and there's no fixed menu to publish. Come back in a different season and the meal will have moved on without you.
