It begins with ceviche

Fish cured to order in bright leche de tigre, sharp with lime and ají. It's the first thing to arrive and the truest taste of the coast — everything else follows from it.
Then, the charcoal
Anticuchos over open flame, pollo a la brasa turning slow and golden, whole fish laid on the embers. The grill is the heartbeat of the kitchen — you'll hear it before you see it.

Low light, hanging greenery, ceramics on every table and a bar lined with pisco. It's built for the long kind of dinner — the one where you order one more round and lose track of the hour.
