Omakase means "I leave it to you." You sit, and the chef serves you the season, piece by piece, adjusting to the room and the fish that came in that morning. There is nothing to order and nothing to decide.
If that sounds like a lot of trust — it is. That's the whole point. Come hungry, tell us about allergies in advance, and let the evening unfold.

How the meal moves.
A meal has a shape. It opens light and cool, builds toward richness, and settles again. Step through a typical progression — the exact pieces change with the season.

Autumn is when the fish carry the most fat before winter. Right now we're serving sanma (Pacific saury), lightly cured kohada, and the first buri of the season — with new-crop rice that's just come in.
— A note from the chef. What's listed shifts week to week; if a fish isn't at its best, it isn't served. We don't fabricate sourcing claims or name specific docks or markets.
Two things, done completely.
The rice
Half the meal is rice, so we treat it that way. New-crop grain, a vinegar blend we adjust by season, and served warm — close to body temperature — so it loosens the moment it meets the fish. Cold rice is the easiest way to ruin good fish.
The fish
Some fish are best the day they arrive; others we age for days to concentrate flavor, or cure with salt and vinegar in the edomae tradition. Each piece is seasoned at the counter — soy, salt, or citrus — so it reaches you finished. No soy dish to dip into.

Arrive a few minutes early
The seating begins together at 6:00 or 8:30. Latecomers may miss the opening courses.
It's an intimate room
Twelve guests, one chef. Conversation is welcome; phones on silent, photos without flash.
Come as you are, within reason
No formal dress code — most guests arrive smart-casual. No strong fragrance, please; it competes with the food.

Sake is never required — tea and a thoughtful non-alcoholic pairing are always offered. If you'd like sake, the pairing follows the courses, moving from light to rich alongside the fish.
