Sea buckthorn, frozen apple, a mignonette sharp enough to wake the table. One cold bite that tells you where you are before a word is spoken.

The Sea
The catch that morning, barely touched — sliced thin, dressed cold, and left to speak for itself.

The Fire
Everything hot comes off one hearth. The scallop goes on last, kissed by smoke, finished in butter that smells of the sea.

The Land
Aged three weeks, rendered slow over coals until the skin turns to mahogany. Cherry from the summer's preserve, bitter greens for balance.

The Room
