Specialty espresso & roastery · New Haven

Espresso, dialed to nine bars.

A State Street espresso bar and micro-roaster. We roast our own single origins, pull every shot at nine bars of pressure, and keep a quiet back room for the laptop crowd.

The house standard

Nine bars, every shot.

Nine bars of pressure is the classic benchmark for a balanced espresso — enough to pull sweetness and body without scorching the grounds. We dial in the grind every morning and re-check it through the day as the beans settle.

Our signature is the cortado: a double ristretto cut with just enough steamed milk to round it out. Order it on oat and it's the drink we make most.

From the bakery case

Laminated pastries delivered each morning from a local baker — croissants, almond croissants, morning buns, and our regulars' favorite cardamom bun. Gone when they're gone.
