The barrel program

Time does most of the work.

We source spirit barrels — bourbon, rye, cognac, rum — and fill them with beer built to age. Then we wait. The oak, the char, and the ghost of what was in the barrel before do the rest.

No rushing, no shortcuts. A barrel tells us when it's ready, and not a week before.
