We cook one hog at a time.

Eastern North Carolina barbecue, cooked over coals, chopped by hand, and dressed with nothing but vinegar and pepper.

There's no brisket here, no dry rub, no thick red sauce. In this part of the state, barbecue means the whole hog — cooked slow over hardwood coals until every part pulls apart, then chopped together so a little of everything ends up on your plate.

We dress it the eastern way: a thin splash of cider vinegar, salt, and red and black pepper. Sharp, not sweet. It cuts the richness and lets the pork taste like pork.

Come for a plate, or gather the whole crowd for a supper. Either way, you'll be eating the same hog as the table next to you.

What "whole hog" means

The whole animal, cooked as one.

Instead of cooking one cut, we cook the entire hog over coals for the better part of a day. Different sections cook into different textures — and when it's done, we chop them together so every plate has a mix. That blend is the whole point.

Whole-hog barbecue in eastern North Carolina was shaped in large part by Black pitmasters and cooks, whose work built the tradition this restaurant is grateful to cook within.

The cook schedule

When the hog goes on.

We only cook so many hogs a week, and Friday's community supper is the big one. Come when there's fresh chop coming off the pit.

A whole-hog cook feeds a crowd — so we cook for crowds. The Friday supper seats everybody at shared tables, and we keep the pit going for the things that bring a town together.
